Vinny G’s Pizza Dough

Ingredients:

1 3/4 cup shredded mozzarella cheese
3 tablespoons plain cream cheese
1 cup almond flour
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
Pinch sea salt
1 egg lightly beaten
Cooking spray

Directions:

  1. Preheat the oven: Set the temperature oven to broil
  2. Melt the cheese. Stir together the mozzarella and cream cheese in a large microwave-safe bowl and microwave on high for 1 minute. Stir the cheeses and heat them again for 30 seconds to 1 minute until they’re completely melted.
  3. Add the dry ingredients. Stir in the almond flour, basil, oregano, and salt until everything is well mixed and set it aside to cool to room temperature, about 10 minutes.
  4. Finish the dough. When the mixture has cooled enough that it won’t cook the egg, mix in the egg until it’s well blended, then gather the dough into a ball.
  5. Roll the dough. Lay a piece of parchment paper on a baking sheet and spray it lightly with olive oil. Place the dough on the sheet in the center and press it down with your fingers to form a disc until it is about 1/2 inch thick.
  6. Broil the dough until it is golden and firm; about four minutes.

K.B.’s Pizza Dough

Ingredients:

1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/4 cup shredded parmesan cheese
2 eggs
1 tsp Italian seasoning

Directions:

  1. Preheat oven to 350°F. Line parchment paper inside a 9-inch round pie pan.
  2. In a bowl combine all the crust ingredients. Pour the mixture into the pie dish. Using a spatula, spread the mixture evenly across the bottom. Place into the middle section of the oven and bake for about 20 minutes until all of the crust is a light brown. When you touch the crust, it should be pretty firm.

Fathead Pizza Dough

Ingredients:

3 1/2 cups shredded mozzarella, divided
2 tablespoons cream cheese
1 egg
3/4 cup almond flour
1 teaspoon Italian seasoning

Directions:

  1. Preheat oven to 425 degrees.
  2. Add 2 cups of mozzarella and cream cheese to a microwave safe bowl and microwave for 1 minute. Stir to combine and return to microwave until cheese has melted, about 30 more seconds.
  3. Stir in the almond flour, egg, and Italian seasoning to combine.
  4. Place the dough on a large sheet of parchment paper. Top with a second sheet of parchment.
  5. Roll the dough out into a 12 inch diameter circle.
  6. Remove the top piece of parchment and transfer the bottom sheet with the dough on it to a pizza pan.
  7. Bake for 10 minutes or until crust is lightly golden.
  8. For an extra sturdy crust that holds up well, carefully flip the crust over and bake for 3 more minutes.
  9. Remove crust from the oven.
