Keto Poutine
Ingredients:
Cauliflower Fries:
3/4 cup grated mozzarella cheese
1/4 cup grated parmesan cheese
2 eggs
1T almond flour
1 cup cooked cauliflower rice
salt and pepper to taste

Gravy:
1 cup chicken broth
1 tbsp nutritional yeast
1 tbsp butter
onion powder, salt and pepper to taste
Gravy thickener:
1/2 cup chicken broth
1/2 teaspoon xanthan gum
Topping:
About 1/2 cup cheese curds
Preparation:
- Heat up chaffle maker
- Combine all the chaffle ingredients into a bowl and mix well
- Spread one quarter of cauliflower cheese mixture onto waffle iron and spread evenly with spatula.
- Close lid and cook until steam subsides.
- Make gravy:
- Blend 1/2 cup broth and 1/2 tsp xantham gum in small blender and blend until combined
- In a pot, combine the rest of the gravy ingredients and heat until it simmers
- Whisk in the contents of blender until you have a nice smooth gravy
- Cut Chaffle into sticks and pile onto a plate
- Layer cheese curds on top
- Pour hot gravy on top
