Snickerdoodles

Ingredients:

  • 2 cups almond flour
  • 1/2 cup salted butter, softened to room temperature
  • pinch of kosher salt
  • 1/2 cup erythritol granulated sweetener
  • 1/4 cup erythritol powdered sweetener
  • 2 tablespoons coconut flour
  • 1 tsp xanthan gum
  • 1/2 tsp baking soda
  • 1 large egg yolk

    For the coating:
    • 2 Tbsp erythritol granulated sweetener*
    • 1 tsp ground cinnamon

Preparation:

  1. Preheat oven to 350 F
  2. Mix all of the cookie ingredients in a medium sized bowl until a stiff dough forms
  3. Roll the dough into 12 balls of equal size
  4. Combine the cinnamon and sweetener in a small dish
  5. Roll the balls in the mixture until well coated
  6. Place on a parchment-lined cookie sheet and flatten slightly with the bottom of a glass
  7. Bake at 350 F for 15 minutes
  8. Remove and cool slightly before serving
